Vegetarian Split Pea

This makes a really hearty pea soup. The more split peas you add, the thicker your soup will be. Just remember to stir your pot every 5 minutes or so that the peas don’t stick to the bottom!

10 – 12 cups of vegetable stock*

1 onion, chopped

3 – 4 stalks of celery, chopped

3 – 4 carrots, grated

2 – 3 potatoes, diced

1 tbsp Worcestershire Sauce
2 tsp garlic, minced
Salt & pepper, to taste
1 tsp celery seed
1 package
(about 12 – 16 oz) green split peas (the more peas you add, the thicker your soup will be)

DIRECTIONS:


Put water and soup base in pot.

When near boiling, add all remaining ingredients.

Cover and gently simmer for at least 1 ½ hours, until peas are cooked down. MAKE SURE TO STIR YOUR SOUP EVERY 5 MINUTES OR SO as the peas will sink to the bottom of the pot until they soften.

You may need to add more seasoning once peas are cooked.
