Creamy Tomato & Basil

Vegetables used in this recipe
Basil, Garlic, Onions, Tomatoes

10 cups chicken or vegetable broth*

1 onion, finely minced

1 clove garlic, finely minced

10 – 12 fresh tomatoes,
cored and chopped in food processor

(no need to peel tomatoes,
you can add even more if you want)

1 – 2 tomatoes, chopped
(to give a little texture to the soup)

Salt & pepper, to taste
Few drops of Tabasco sauce
3 – 4 tbsp of fresh basil, finely chopped

1 ½ cups cream
2 tbsp butter

(do not substitute margarine!)

DIRECTIONS:


Combine all ingredients in pot except for 1 tbsp basil, the cream and butter.

Bring to a boil and simmer for 30 minutes.

Add cream and butter as well as the remaining tbsp of basil.

Simmer a few minutes.

 

You may have to adjust your seasoning – so adjust as needed.
