Sweet Potato Pumpkin Soup

Sweet Potato, Onions

 2 cups pumpkin, cubed
2 cups sweet potatoes, cubed
1 sweet onion
1 tbsp olive oil

 

 4 cups vegetable broth
2 cups water
¼ tsp of Alphonsa’s seasoning
2 tbsp Coconut milk
(optional)

DIRECTIONS:


1. Sauté the onions with olive oil first, then add sweet potatoes & pumpkin. Continue to sauté them all lightly.


2. Add vegetable broth and water, cook until soft then puree.


3. Add Alphonsa’s  seasoning. Add coconut milk [optional] and serve.
